Biografia
Michele è un tecnologo alimentare specializzato nello studio della qualità degli alimenti combinando analisi sensoriali e strumentali. Attualmente è ricercatore presso la Edmund Mach Foundation. In precedenza, ha lavorato come ricercatore e project leader presso Wageningen Food & Biobased Researcher concentrandosi sui composti organici volatili come marker di qualità durante le fasi di post-raccolta di prodotti freschi (frutta e verdura). Ha svolto il suo dottorato di ricerca nel campo della qualità alimentare tra la Fondazione Edmund Mach e l'Università di Wageningen dove, con la collaborazione di Soremartec (gruppo Ferrero), ha studiato l'applicazione della spettrometria di massa a iniezione diretta nell'agroindustria per valutare la qualità alimentare percepita. Dal 2014 al 2021 è stato ricercatore presso il Barilla Center for Food & Nutrition dove ha avuto la possibilità di approfondire le sue conoscenze sui temi della sostenibilità alimentare, tra cui perdite e sprechi alimentari, agricoltura sostenibile e politiche alimentari.
Attività di Ricerca
Attualmente Michele sta lavorando nel progetto EU SISTERS che mira a ridurre le perdite e gli sprechi alimentari lungo tutta la filiera europea combinando diverse soluzioni sostenibili.
